Veggie Recipe

A little over a year ago I decided I didn't really like cooking or eating meat so I cut back. A lot. While I'm not 100% vegetarian, I do eat  a lot more vegetables now

The transition for the most part has been easy for me; however, I live with a very much loving meat eater. In order to make dinners we both enjoy I learned that I was going to start actually cooking.

Both of these recipe are super simple and make great side dishes.


Baked Broccoli 

Ingredients:
1 head of broccoli or 1 bag of pre-cut fresh broccoli
Olive oil
Cooking spray
Garlic salt
Pepper
Fresh basil or basil seasoning
Red Pepper [optional]

1. Preheat oven to 425 degrees

2. Put the clean freshly cut broccoli in a bowl and lightly coat with olive oil

3. Sprinkle pepper, garlic salt, and basil to taste.

4. Spray cookie sheet with cooking spray (I used an olive oil favor)

5. Spread broccoli out on the sheet; sprinkle with red pepper flakes

6. Bake for 20 minutes (while checking on it occasionally to move broccoli around)

7. Once the broccoli is lightly brown and crunchy you know it's done.


Balsamic Baked Asparagus 

Ingredients:
1 bunch of asparagus
Cooking spray
Balsamic dressing (about 1/2 cup)
Parmesan cheese or lemon juice [optional]

1. Preheat oven to 425 degrees

2. Clean asparagus and break off the white ends; place in bowl

3. Lightly coat the asparagus with a balsamic dressing and season with pepper

4. Spray cookie sheet with cooking spray

5. Spread the asparagus out on the sheet; top with some Parmesan cheese or lemon juice [optional]

6. Bake for 20-25 minutes; asparagus will be a light brown colored once done
